Mexican Dinners

Mexican Joe

 1 lb. ground beef

1 can tomatoes with green chilis

1 can dark red kidney beans

1 can carrots

1 1/2 cups rice

1 onion finely chopped

1 table spoon chili powder

1/2 cup water (add more if needed)

salt and pepper to taste

Brown grownd beef until done, add onion, stir fry a bit longer. Add in all ingredients and simmer 30 minutes over very low burner.  Stir frequently.  Top with cheese if desired. serve with sour cream and salsa. Serves 4 – 6 people. Add a salad or green vegetables for balanced menues.

Poor Man’s Polenta

 1 lb ground pork browned

1 large onion diced and browned

1 large red pepper (dried peppers taste great in this recipe)

Drain all grease from pork and onion mixture.

 Drain 3 can’s hominy and add to pork mixture. Stir fry over medium heat until warm. Serve with Tortillas.

Homestyle Burritos

1 lb ground beef

1 large can refried beans

12 oz grated cheese

Tortillas

Brown ground beef, add beans, and heat through.  Spoon into tortillas and top with cheese. Roll tortilla and serve.

We sometimes warm the tortilla’s slightly in a pan, or in the microwave.

Add salsa and fresh veggies or green chilli for a great meal. Or wrap in foil for a nice lunch on the road.
